INGREDIENTS

  • 320 gr Durum wheat fettuccelle
  • 500 gr Asparagus
  • 40 gr Parmesan
  • 40 gr extra virgin olive oil
  • 4gr Salt
  • 15 gr 1 sprig of mint

Wash and steam the asparagus for 10 minutes. Alternatively, they can be stewed with 400 ml of water for 15 minutes. Do not drain. Leave them cool in their cooking water.

Blend the asparagus without draining so as to preserve their nutrients. Strain to eliminate filaments. Add extra virgin olive oil and parmesan. Mix well to obtain a thick and homogeneous mixture.

In the meantime, cook the pasta. Put the pesto in a pan and add two ladles of cooking water. Mix well. Add pasta and mix again.
