SEA BREAM COOKED UNDER SALT WITH BAKED POTATOES
INGREDIENTS
- 4 sea breams (300/400 gr)
- 2 kg Coarse salt
- Herbs (thyme, marjoram, bay leaves, parsley)
- Spices (black pepper, red berries)
- 1 lemon
- 2 Egg whites
- Extra oil for seasoning at the end of cooking
- 4 Large potatoes
- 3 sprigs of thyme or rosemary
- Extra virgin olive oil
- Salt and Pepper

METHOD
Prepare fish by cleaning out inners. Pour the salt into a large bowl and add egg whites, chopped herbs, lemon juice and zest, and spices. Knead the salt until you get a homogeneous dough.
Pour part of the dough at the base of a baking dish, lay the sea breams on top. Cover fish with remaining salt.
Prepare the potatoes before baking the fish.
Peel them, cut them into small pieces and put them in a large saucepan and cover them with cold water. Turn on the heat and bring to a boil. Reduce the heat and cook for about 15 minutes.
When they are partially cooked, drain them and put them in a baking tray with a few sprigs of thyme and/or rosemary and 2 tablespoons of extra oil. Place potatoes in pre-heated oven (220°) together with fish in separate baking trays. Bake for about 22 minutes. Both fish and potatoes will have same cooking time. When cooked, remove salt from fish and serve with some olive oil. Enjoy your meal!
