INGREDIENTS

  • 240g Squid
  • 400g Potatoes
  • 150ml Water obtained from cooking
  • 500g Octopus
  • 6g Parsley
  • 1g Salt
  • 2g Coarse salt

METHOD

Place octupos in a pot with water. Add coarse salt and cook for 25 minutes.

In the meantime, peel and cut potates into cubes. Place potaotes in a pot with water and cook for 25 minutes. Strain potatoes and blend with some cooking water. Add salt.

Cook pasta in salted water.

Wash and finely chop parsley. When octupus is cooked, rinse it very well in cold water.  Remove ink sack from under head. Finely chop octupus. Place chopped octupus in a pan and cook for 1 minute. Add creamed potaotes and cooked pasta. Mix well.

Garnish with chopped parsley.

THE CHEF’S ADVICE

Always set aside some water obtained while cooking. This can be used to mix ingredients together.

NOTE

To check if octupus is cooked, prick it with a tooth pick. If the tooth pick comes away easily, it is cooked.
