INGREDIENTS

  • 280 gr of spelled
  • 50 gr of potato already peeled
  • 120 gr of amberjack fillet already clean and delicate
  • 15 gr of onion
  • 10 gr of celery
  • 60 gr of cherry tomatoes
  • 20 ml of extra virgin olive oil
  • 10 gr of parsley and celery mix

Cook the spelled in abundant salted water and in the meantime cut the amberjack fillets into squares. As soon as the spelled is cooked, drain it and keep the cooking water.

Put the onion, the potatoes previously cut into chunks, the chopped celery and the cherry tomatoes in a pan, add 500-600ml of spelled cooking water and another 300-400ml of water and cook. After a few minutes, add the amberjack, half of the required extra virgin olive oil and cook for another 7-8 minutes. Add the spelled and mix.

If it is too dry, add hot water.
Season with salt and serve.
Distribute the remaining extra virgin olive oil in the four plates and add a chopped fresh celery and parsley.
