KOS PUDDING
INGREDIENTS
• 2 jars (150 g each) Fage “Total 0%” Greek yogurt
• 40 g light brown sugar (Demerara)
• 3 g powdered agar agar (or isinglass)
For the presentation:
• 1 teaspoon of honey (10 g)
• 2 walnut kernels
• 100 g strawberries

METHOD
In a saucepan over medium heat, dissolve the sugar with a spoonful of water.
When it has melted and has not yet browned, pour it into the glass of the hand blender (or similar as long as it is tight and high) with the yogurt and give it a smoothie.
In the same saucepan (which has cooled down in the meantime) dissolve the agar agar in 4 tablespoons of water and put on the stove for 5 minutes (however, read the instructions on the jar).
Now combine it with the yogurt / sugar and blend well.
Pour the mixture into the bowls and when it is warm put in the refrigerator for at least 1 hour.
Once solidified, take it out of the mold and put on each pudding the warmed honey lengthened with very little water, the crushed and toasted walnuts in a dry pan.
Next, put a couple of tablespoons of the diced strawberries, possibly warm (in the same pan as the walnuts, put the diced strawberries, sugar and a couple of tablespoons of water, cook over high heat, stirring for 2 minutes).
Serve.
