INGREDIENTS

  • 200 g of flour “0”
  • 150 g of whole wheat flour
  • 150 g of carrots
  • 60 g of Demerara cane sugar
  • 100 g of hazelnuts or almonds
  • 1 egg
  • 40 g of sunflower oil
  • 1 tablespoon of cinnamon powder
  • 1 pinch of salt

To decorate

  • 50 g of icing sugar
  • 1 tablespoon of water

METHOD

Blend the dried fruit finely with the sugar and set aside. With the special disc with grated holes carrots, put back the blades and add the sugared fruit, flour, egg, oil, cinnamon, salt, then start the machine shaking it to take all the ingredients. You will have to obtain a grainy dough (wet sand type) that you will compact with little force and crush in a disk 3 or 4 cm high. Wrap the dough disk with film and put it in the refrigerator.

After resting, roll out the dough on a floured pastry board with a rolling pin with a thickness of 4mm giving the biscuits the shape you prefer. Bake in a preheated oven at 180 ºC and cook for 15 minutes. Lower the oven temperature to 160 ºC and cook for another 5 minutes. Remove from the oven and let the cookies dry a few minutes outside the oven. In a small bowl put the icing sugar and 1/2 tablespoon of water (add the remaining water if the dough seems too hard – you must obtain a toothpaste-like mixture).

With a syringe from injections with the tip cut or with the appropriate cone of paper, decorate the cookies as you see fit.
Let dry for at least 3 hours or for a whole night.

Carrots have several beneficial properties because they are the main source of beta-carotene, precursor of vitamin A, antioxidant, anticancer and beneficial for the skin, heart and sight.

Another prominent ingredient is cinnamon, a dried spice that is obtained from the bark of some trees (Cinnamomum zeylanicum). The use of cinnamon as a natural medicine was already known, but over the centuries, its properties and benefits have become increasingly accredited.
In particular, it is a natural antioxidant that stimulates blood circulation, fights “bad” cholesterol also helping to protect the cardiovascular system. It has antibacterial, antiseptic, stimulant and digestive properties. In addition, recent studies have shown that cinnamon powder, being rich in substances called polyphenols, has a good ability to lower plasma glucose levels, making it potentially useful in the management of diabetes. Finally, it is an excellent source of vitamin C, E, K, B vitamins and mineral salts such as magnesium, calcium, iron, potassium, phosphorus, selenium and zinc.
