GRAPEFRUIT SALAD WITH APPLE, LEMON AND PEPPERMINT
INGREDIENTS
- 2 Pink grapefruits
- 1 Lemon
- 1 Green apple
- Peppermint

METHOD
Citrus fruit salad can be served as a starter. It can be seasoned with olive oil and vinegar or served at end of meal with a lemon sorbet.
Place bowl under grapefruit and lemon while peeling them to recuperate lost juices. Remove white parts and skin attached to peel.
Look at photograph for indication!
Cut the apple into cubes and add to grapefruit and lemons. Add fruit juice obtained while peeling.
This dish can be served in 2 ways – sweet or savoury.
If you opt for the savoury choice, mix fruit juices with oil and salt.
For sweet option, add honey to fruit juices and them some lemon sorbet.
NOTE
Always ask your oncologist if you can consume this dish as grapefruit can cause a reaction with certain medications.
