INGREDIENTS

  • 1 ripe avocado
  • 1 banana
  • 400 ml coconut vegetable drink (no added sugar – Alpro)
  • 3 teaspoons of honey
  • 2 tablespoons of lemon juice
  • 1 pinch of salt

For the garnish:

  • 5/6 mint leaves
  • 40 g dark chocolate 80% cocoa
  • chopped pistachios

METHOD

8 – 4 hours before:

  1. Peel the avocado and chop it, peel the banana and cut it into 6 pieces and put everything in a large container in the freezer (the pieces must not overlap).
  2. Place the coconut can straight in the freezer.
  3. Place an empty plum-cake pan (the rectangular, narrow and long ones) in the freezer.

Prepare all the ingredients you want to use and attack the robot.

Then take the coconut can from the freezer and open it with a can opener so that you can only take the solid part that has separated (the liquid part, use it for another preparation, you can also use it for a simple smoothie), take it from the freezer too the pieces of fruit and put them in the robot with all the other ingredients. Blend everything together starting with intermittent strokes until the mixture is smooth and creamy.

Add the chopped chocolate (if you want to use it) and mix with a spatula. Take the pan from the freezer, transfer the mixture to it leveling it and place it in the freezer for a couple of hours.

Shrug into bowls and put them in the freezer for 10 minutes.
Garnish with chopped pistachios or chocolate curls or mint leaves and serve.
