INGREDIENTS

Ingredients Mayonnaise

  • 100 ml soy milk
  • 220 ml sunflower oil
  • 1 teaspoon mustard
  • 2 tablespoons apple cider vinegar or lemon juice
  • 1 pinch of salt
  • 1 dusted with turmeric

Ingredients Russian salad

  • 3 medium boiled potatoes
  • 3 medium carrots boiled
  • 300 g peas
  • 250 g vegan mayonnaise
  • 1 apple
  • 4 pickled gherkins
  • 1 tablespoon mustard
  • salt

METHOD

Vegan mayonnaise

In a container with high edges, mix soy milk with sunflower oil.
Add all other ingredients (mustard, apple cider vinegar or lemon juice, salt, turmeric) and blend with a blender.
Consider increasing the amount of apple cider vinegar slightly, depending on how acidic you want it to be.

Russian salad

Cut potatoes, carrots and gherkins into cubes and add the peas.
Mix the mustard with the vegan mayonnaise and pour the sauce over the vegetables, stirring gently.
The Russian salad is ready to be served!
