INGREDIENTS

  • 500 g of “Total 0%” Greek yogurt
  • 200 g whole wheat pastries (such as Weetabix)
  • 500 g of assorted fresh fruits (strawberries, raspberries, blueberries, currants)
  • juice of 1⁄2 filtered lemon
  • 1 tablespoon whole cane sugar
  • seeds of 1 vanilla pod (optional)
  • 1 glass of water
  • bicarbonate of soda (to wash the fruits)

METHOD

Clean the fruits, wash them with water and bicarbonate and rinse them thoroughly. Cut the strawberries and place them in a bowl, wetting everything with lemon juice and adding ½ tablespoon of sugar. Leave to rest in the refrigerator for 2 hours.

Make a mixture by boiling the water, the vanilla seeds and the other half of the spoonful of sugar (the mixture must be very liquid) and start wetting the Weetabix very quickly, just soak them for 1 second.

Place the soaked Weetabix on a plate or sheet of silver foil. With a sieve, filter the leftover syrup, add it to the yogurt and with a blender, or more simply with a spoon, mix it well.

In the chosen cups/glasses begin to arrange the soaked Weetabix in pieces, then the yogurt cream and some fruit with its juice.

Proceed by making 2 or 3 layers of Weetabix alternating with the cream. Place the finished cups in the refrigerator and leave to rest for half an hour.

Remove from the refrigerator 5 minutes before serving the dessert.
